BBQ Chicken Pizza Stuffed Spaghetti Squash




Easy Low Carb BBQ Chicken Pizza Stuffed Spaghetti Squash – filled with sweet tangy BBQ sauce, 22 grams of protein and gooey cheese. All your favorite things about BBQ Chicken Pizza for under 300 calories!

As I write this, I’m still pregnant. Some of the posts while posting on certain days, were written a couple weeks ago. So right now I’m 38 weeks and struggling y’all.

Physically I’m fine. I feel great. Usually in the evenings I start to feel uncomfortable but it’s the end of the day so that’s normal. Emotionally I’m a hot mess. I feel like I could break down and start crying at anything. Part of that is just because I want to meet our sweet baby girl. (see… even as I type that, I started crying… ughh.. HOT MESS!)


Ingredients
  1. 1 spaghetti squash
  2. 1 tablespoon olive oil
  3. 1 cup Stubbs BBQ Sauce
  4. 1 cup cubed rotisserie chicken
  5. 1 cup shredded mozzarella cheese
  6. ¼ cup sliced red onion
  7. optional: garnish with fresh basil


Instructions
  1. Preheat oven to 400 degrees.
  2. Cut spaghetti squash in half. Scoop on the seeds. Drizzle with 1 tablespoon of olive oil and rub into the squash. Place squash cut side down on a baking sheet.
  3. Bake for 35-40 minutes, or until the squash is tender when poked with a fork.
  4. Remove from oven. Using a fork gently scrap the squash into spaghetti strands.
  5. Preheat oven to HIGH broiler.
  6. Top each spaghetti squash half with ½ cup BBQ Sauce, ½ cup shredded mozzarella cheese, ½ cup rotisserie chicken and sliced red onion.
  7. Place in broiler for 5-6 minutes, or until the cheese is melted and slightly browned.
  8. Garnish with sliced fresh basil and serve.
